FAQ about GF/ WF

What is gluten?
Gluten is a protein found in wheat that allows wheat products to rise and maintain shape but also causes some awful reaction in some people. (Source: wikipedia)

What is Celiac's disease?  Do I have it?
Celiac's disease is essentially a gluten allergy.  When a person with the disease ingests gluten, the villi, or lining of the small intestine, flattens out, preventing the absorption of nutrients.  Symptoms include: indigestion, bloating, gas, nausea, vomiting, decreased appetite, lactose intolerance, fatigue, unexplained weight loss, and fatty stools that float. (Source: Dr. Levitsky's lecture on Absorption in NS 1150)

I do not have Celiac's disease.  Also, do not use this self-diagnose; that leads to poor life decisions.

What is gluten sensitivity? Do I have it?
A person with gluten sensitivity does not necessarily have Celiac's disease.  People with gluten sensitivity can exhibit any of these symptoms.  No, I don't have this either.

What are foods that contain gluten?
Anything with wheat in it, baked goods containing flour, bread made with flour, pasta, noodles, breaded products, beer, most rice products coming out of boxes, most cereals, oats, cous cous, tabouleh, and more.  (Source: gluten-free diet help)

Difference between gluten and wheat sensitivity?  Do I have it?
Many of the symptoms of a wheat sensitivity are the same as gluten sensitivity, except it results from eating wheat products, such as pizza, pasta, and bread.  This condition is what I have, confirmed by a doctor after taking blood tests that resulted in extracting 6 vials of blood from my system (sexy, I know).  I can safely eat cous cous, oats, and rice, but baked goods, pasta, and bread give my tummy the aches and other issues.  Other foods I personally can eat in moderation, such as egg noodles, but I can't eat it all the time.  Bye-bye, bi-weekly Chinese lo-mein.

Why fashion and food?
Fashion has always interested me, but I never really had the time or money to invest in the creativity that goes into being a full-out fashionista.  But I do very much pay attention to what I wear most days.  So, after talking to a friend of mine about my interests, he suggested to integrate the two.  And then this drastic change to my blog happened.
